Fitmas Day 9!

Today I've got a delicious lunch salad recipe for you to try! It is so fresh and one of my favorites! I hope you enjoy. 
Ingredients (makes 4 servings):
-12 oz grilled chicken breasts, sliced
-1 cup diced avocado
-1 cup diced mango (~ 1.5 mangos)
-2 tbsp diced red onion
-6 cups baby butter lettuce

For the dressing:
-2 tbsp EVOO
-2 tbsp white balsamic vinegar
-salt and pepper to taste

Step 1: Mix ingredients for dressing together and set aside.
Step 2: Toss avocado, mango, chicken and red onion together. 
Step 3: Divide lettuce in 4. Divide chicken mixture in 4 and place on lettuce. 
Step 4: Drizzle dressing over the salad and enjoy.
