Holiday Day Recipes part 2

I am a huge fan of cooking, unfortunately when I am juggling classes, workouts and homework I tend to go for my simple go to recipes to save time. I shared with y'all before, here, one of my easy appetizers as well as a yummy holiday cookie, and both have for sure made an appearance at my house while I've been home.  Over the holiday break, I have also been able to try out some new ones...and I am going to share with you my favorites! (Which also happen to be really really easy!) 

As I mentioned before I had a few friends over to watch the Rose Bowl game, so obviously my mom and I cooked up a storm in preparation. I made a yummy 7-layer dip that was a huge hit, as well as a Spartan Green Cocktail! 

Seven Layer Mexican Dip

Ingredients: 
Makes one 9 x 12 serving dish

-1 8oz package of cream cheese (I used fat free...but the kind you choose does not matter!)
- 1 can of refried beans (9 oz can) 
- 1 jar of salsa ( I used mild because my mom doesn't like spicy but this can be to taste)
- 1 package shredded cheese (I used a Mexican blend...but again to taste)
- 1 can of black olives (4 oz)
-2 8 oz packages of Guacamole (I use the Wholly Guacamole brand. You could also make homemade...I didn't because I was in a time crunch) 
- 2-3 scallions
-1 bag of tortilla chips (I prefer the multi-grain Tostitos) 

Step 1: 
In a separate dish cook refried beans, you can do this on the stove top or in the microwave. 
Soften cream cheese in microwave and cover bottom of the serving dish. Once the beans are heated up, spread them evenly on top of the cream cheese. 

Step 2: 
Spread guacamole on top of the beans and then cover with the salsa of your choice. 

Step 3: 
Chop scallions in to small bits and do the same with olives if necessary. (I usually buy pre-sliced olives)

Step 4: 
Spread cheese to taste over salsa layer, then garnish with black olives and scallions. 
Viola! Easy easy easy!


Spartan Cocktail

Ingredients: 
Serves 6-8 depending on how heavy you drink 
-1 oz of vodka (I used regular Ketel One, but you could also try flavored)
-4 oz champagne of choice 
- 1/2 oz melon liqueur (I used Midori...not sure if there are other options) 
-2 limes (optional) 

Step 1:
Combine vodka, champagne and melon liqueur in your favorite serving glass. Garnish with a lime slice. 
*Note: be VERY careful about the amount of melon liqueur you add...the color is great when you add a lot but lord have mercy that stuff is SWEET. 

My mom, for some reason,has green stemmed glasses, which worked perfectly! 
How festive! Perfect for any Spartan tailgate! GO GREEN!

One night, my friend Court and I decided to have mexican night at my house. We made tacos, spanish rice, and this delicious bean salad. This recipe is for sure a keeper. 

Southwestern Mexican Bean Salad

Ingredients:
Serves 13
- 15.5 oz of canned black beans, drained and rinsed
- 9 oz of cooked corn (I used frozen)
-1 medium tomato, chopped
-1/3 cup red onion, chopped
-1 scallion, chopped 
-1 1/2 - 2 limes, for juice
- 1 tbsp of olive oil
-2 tbsp of fresh minced cilantro
-salt and pepper
-2 medium avocados, diced
-1 diced jalapeño (optional) 

Step 1:
In a large bowl, combine black beans, corn, tomato, red onion, scallion, cilantro and salt and pepper. 

Step 2: 
Squeeze fresh lime juice to taste and stir in olive oil. 

Step 3:
Refrigerate for 30 min and add diced avocado as garnish before serving. 

Unfortunately, I forgot to take a picture of this one before we served it. But it looked so yummy, lots of fresh, bright colors! And, for what it is worth, my mom gave it rave reviews. :)
