Snow Days!

Let me preface this post by saying the Michigan girl in me found this whole ordeal quite hilarious, however where I live in middle Georgia is not only 100% NOT prepared for any type of winter-y storm but the people that live there have also never seen more than a dusting in their lives. 

If you follow me on Pinterest, you may have noticed that all of my boards have been reorganized and I pinned a lot of new stuff...this is not because I have been slacking at school but because I have not had school in almost three days...and the entire city has been shut down. I'm not even kidding, Mo and I tried to go to the mall yesterday...EVERY store was closed and there was ONE restaurant open.  Of course, if you watch the news at all I'm sure you have seen photos and video of the madness that took place in Atlanta due to this snow storm. There has been a lot of reaction saying that people overreacted, which is probably true, however it must be kept in mind that these people have no idea how to deal with snow. The entire city of Atlanta has 10 snow trucks. Detroit for example, has closer to 50...and the size difference as far as square miles of the two cities is negligible (almost 8 square miles to be exact.) 

Anyway...on Tuesday I went to my first two classes as normal and everyone was in a panic. I had checked the weather and saw that we were expected to get between 1-4 inches of snow and while I thought it was odd I was like okay people big freaking deal, that is still totally drivable. The university however cancelled class for the rest of the day and said stay tuned for updates about Wednesday. 

This is what it looked like when I got home from school....no rain...no snow...no nothing.

A few hours later we got word that Wednesday classes would be cancelled, by this time it was raining but it was still almost 40*. 

By this time my apt complex had closed off  due to weather conditions the road that leads to my apt. This is just a little baby hill...so silly. 
Eventually the rain turned to snow. It was the first snow Coconut (my car) had seen in a long time!
It started coming down pretty hard. 
Mo was so so excited and she insisted we go play in the snow. We walked around our apartment complex in search of the best hill so we could go sledding. Of course we didn't actually have sleds so we used lids to those big tupperware storage boxes. 


It was actually quite pretty! 


Mo was like a little kid on Christmas. 






Seeing snow on Palm trees was just cracking me up!

We actually got in our  bathing suits and got in the hot tub! It was really fun, but VERY cold when we got out! 
I left out all my snow scrapers so my neighbors could borrow them in the morning if they had to head into work!

NABS was SO SO excited about the snow...she made me a snowman! I tell you what, these Georgians are just so cute when it comes to being excited about snow!

We still have a partial snow day today (Thursday), only afternoon classes are in session. It is funny to think that I would have NEVER gotten a day off school in Michigan for 4 inches of snow, yet here in Georgia I have had three days off! 

This was Lulu's first snow. 
She was not sure what to think about it...she certainly didn't like the cold....but she enjoyed having Mommy home for a few days :)

This post is a little silly, however I'm sharing it for two reasons. First, when I saw this article on Harpers Bazaar, I couldn't help but be in awe of their website design. I'm about to get 100% design nerd on you all, but it is seriously beautiful. Their font choices are spot on, excellent combination of serif and sans serif. Their photos are stunning, obviously. And the website it self is just so user-friendly. Granted, they are an incredibly high end fashion magazine...so you would think that they would have the best of the best when it comes to design. But let me tell you, I can think of plenty of companies that should have lovely websites, when in actuality they are horrifying.

Super Bowl Snacks...paleo edition

Confession: I love tailgate food. That may sound like a strange love, but there is nothing more wonderful than taco dip, chili, and other finger foods of the like before going to watch your team *hopefully* win....even if that watching is taking place in your living room, on a couch. Mo often describes me as a 'guys girl' because I can talk about sports with any guy out there. Personally, I think this description is hilarious because I'm not sure that its true. 

Don't get me wrong, I like sports...well certain sports. I was raised in Hockeytown, USA. I will always and forever be a Red Wings girl, I attended Michigan State University and will bleed green and white until the day I die. Nothing is guaranteed to give me chills more than the first lines of the Spartan fight song being played by the Spartan Marching Band inside Spartan Stadium on a chilly September Saturday, or the entire IZZONE linking arms and yelling as our team is introduced player by player. I will cheer for the Red Skins because, homeboy Kirk Cousins is repping my Spartan Dawgs. I was a big Colts fan until they traded the love of my life to the Broncos, but don't worry Peyton I will still cheer for you. (As I re-read this paragraph I am realizing that perhaps Mo has a point...but I stand by my statement.)

The thing about it is, if I get to throw a tailgate party, I will endure pretty much any sport...except NBA basketball, hard pass on that one. Luckily for me, this year the Broncos are headed to the Super Bowl, so I actually have loyalty to a team! If you want to call an undying love for Peyton Manning loyalty.

Anyway, the true point of this post is to share how I am going to handle Super Bowl Sunday appetizers and snacks without totally throwing my paleo efforts aside. When I saw that Kaitlyn at Wifessionals was hosting this link-up with Brittany at This Beautiful Life, I knew I had to participate because this girl is NOT going to pass up a Super Bowl party...or its appetizers for that matter, even if I have to make them all paleo! So here is my menu: 



For a main dish I will make a batch of my Turkey and Sweet Potato Chili. It is so easy and hearty, perfect for any game day! 



I love these Crock Pot paleo nachos because they are just so cute! They are a must! Mo and I had them for dinner on Sunday and they were delish! (See recipe below!)


Obviously, homemade guacamole is a must, both for dipping and to top the nachos. 


Again, for dipping and nacho topping: homemade salsa


Seriously y'all whats game day without buffalo chicken dip? Us paleo-ers can dip celery and carrot sticks, while the rest of y'all can dip tortilla chips like normal people. (See recipe below!)


If we're being honest this is not 100% paleo...but its like 98% there and that counts for something! Plus, if I'm cooking for a crowd I can't substitute ALL the good stuff for paleo food! (See recipe below!) 


Now that I have the menu planned...who wants to host?! I cancelled my cable remember?? (This is a serious statement friends, you host I'll cook)

Okay, since I have not yet posted my newest paleo diaries...three of these recipes are not yet on my blog...but they have been Leslie & Mo tested and approved! But I won't make y'all wait for the next edition of Paleo Diaries to get the recipes...I will just share them now because I love y'all just that much! Crock Pot "Nachos"
serves 2
Ingredients:
-2 boneless skinless chicken breasts
-1/2 onion, diced
-2 tbs chili powder
-2 tbs oregano
-1/2 red bell pepper, diced
-1 clove garlic, minced
-1 cup vegetable broth 
~16 sweet little red and yellow peppers
-salt and pepper to taste

Step 1: Put chicken, onion, chili powder, oregano, bell pepper, garlic, vegetable broth, salt and pepper in crock pot. Let cook for about 3 hours. 
Step 2: Shred chicken, still in crock pot. Turn crock pot to low and let sit for about another hour.
Step 3: Preheat oven to 350*.
Step 4: Cut and seed little sweet peppers. Place on baking sheet
Step 5: Scoop chicken into cut peppers. Bake at 350* for 10 minuets.
Step 6: Top with homemade guacamole and salsa. And cheese, if you so desire. Serve! 

Paleo Buffalo Chicken Dip
Ingredients: 
-1 lb boneless skinless chicken breast
-1 egg yolk
-1 tbsp lemon juice
-1 tsp garlic, minced
-1 tsp mustard
-1/2 cup olive oil
-1/2 cup hot sauce (I generally use Frank's)

Step 1: Preheat oven to 375*. 
Step 2: In a separate pan, cover chicken with water and boil until chicken is white. About 3-4 minuets. Allow to cool, then shred. (You can also do the shredding later in the food processor, however, mine is NOT that big...so I do it on the side first.)
Step 3: In a food processor, blend yolk, lemon juice, garlic, and mustard. Then slowly stream in olive oil until it gets thick. 
Step 4: Add chicken and hot sauce to food processor. 
Step 5: Pour into a casserole dish bake for 25 minuets then serve!

Mostly Paleo Puppy Chow
Ingredients: 
-1/4 cup almond butter
-3 1/2 oz dark chocolate
-3/4 cup powdered coconut sugar
-1/2 tsp vanilla
-2 tbsp butter
-4 cups Chex Rice cereal 

Step 1: In a sauce pan over medium heat, melt chocolate, almond butter and butter
Step 2: Add vanilla and stir
Step 3: Pour chocolate mixture over rice cereal
Step 4: Pour into a ziplock bag and add powdered coconut sugar, shake until coated. 
Step 5: Spread onto parchment paper to cool, then serve! 


One final thing, head on over to Mo's blog and give her some loving, she needs it today. :) 

Spring is Springing (sorta)

I don't know about y'all but I am seriously ready for some warmer weather! (Says the girl who lives in Georgia.) I know that some parts of the country *ahemMichiganahem* are still experiencing full blown winter with endless amounts of snow so I shouldn't whine about our 40 degree weather...but is pool weather too much to ask?!
